Take a deep breath. Close your eyes and imagine standing on the sunny, olive-scented hillsides of the Mediterranean, braced for a bite of the refreshingly fruity and savory Mediterranean Oregano and Feta Salad. This isn’t just another recipe; it draws on the subtle, yet impactful flavors of juicy tomatoes, cool cucumber, and luscious feta cheese— a harmonious symphony of textures and flavors brimming over a canvas of colorful fruits and vegetables coated in aromatic seasonings.
When Flavor Meets Healthy
Falling in love with this recipe wasn’t difficult at all. While my Southern roots and Nigerian heritage hold the foundation of my cooking style, the Mediterranean Oregano and Feta Salad beautifully showcases the flexibility and fusion that food allows. The bright, fruity components in this salad make it the perfect pairing for heavier, starchier dishes; think of a warm, crusty loaf of classic focaccia bread or a hearty helping of cacio e pepe.
The Beauty of Simplicity
There’s something liberating about a recipe that doesn’t require hours of kneading dough or tending to a simmering pot. The beauty of the Mediterranean Oregano and Feta Salad is in its simplicity – both in preparation and its ingredient list. While these flavors bode well together, the room for modification is abundant; perfect for those nights when the pantry is running on the scantier side, or when you’re feeling adventurous in the kitchen.
Health benefits? This recipe isn’t short of those either. Bursting with antioxidants from the colorful bell peppers and immunity-boosting properties of tomatoes, not to mention the wealth of benefits from the olive oil; it truly is a bowl of wellness. Plus the addition of feta cheese does more than just please your palate; it contributes calcium and protein too.
The Mediterranean Oregano and Feta Salad, in its simplistic beauty and wholesome goodness, effortlessly carries a piece of the sunny Mediterranean onto your dinner table. It pays homage to my love for combining distinct flavors to create something exciting and fresh. Much like a good story, every bite of it tells a tale of fusion, health, and heart.
What You’ll Need
- 4 medium ripe tomatoes
- 1 large cucumber
- 1 small red onion
- 1 red bell pepper
- 1 green bell pepper
- 1 cup of green olives
- 1 cup of feta cheese
- 1 cup of extra virgin olive oil
- 4 tablespoons of fresh lemon juice
- 1 tablespoon of dried oregano
- Salt and black pepper to taste
Method
Step One
Start by preparing the vegetables. Wash and dry the tomatoes, cucumber, red and green bell peppers, and the red onion. Chop the tomatoes and cucumber into bite-sized pieces. Slice the bell peppers and onion into thin strips.
Step Two
Place the chopped tomatoes, cucumber, sliced bell peppers and onion into a large salad bowl. Add the green olives to the bowl.
Step Three
For the dressing, combine the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper in a small bowl. Whisk them together until well mixed.
Step Four
Pour the dressing over the vegetables in the salad bowl. Toss the salad gently with a pair of salad servers or large spoons to coat the vegetables evenly.
Step Five
Finally, add the feta cheese to the salad. Break the feta cheese into small chunks with your fingers and scatter it over the salad for the best experience. Serve the Mediterranean Oregano and Feta Salad fresh for the tastiest result.
