What You’ll Need

  • 4 medium ripe tomatoes
  • 1 large cucumber
  • 1 small red onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 cup of green olives
  • 1 cup of feta cheese
  • 1 cup of extra virgin olive oil
  • 4 tablespoons of fresh lemon juice
  • 1 tablespoon of dried oregano
  • Salt and black pepper to taste

Method

Step One

Start by preparing the vegetables. Wash and dry the tomatoes, cucumber, red and green bell peppers, and the red onion. Chop the tomatoes and cucumber into bite-sized pieces. Slice the bell peppers and onion into thin strips.

Step Two

Place the chopped tomatoes, cucumber, sliced bell peppers and onion into a large salad bowl. Add the green olives to the bowl.

Step Three

For the dressing, combine the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper in a small bowl. Whisk them together until well mixed.
