What You’ll Need

  • 4 cups chicken broth
  • 1 cup cilantro, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 ripe tomatoes, diced
  • 2 avocados, sliced
  • 1/2 cup fresh lime juice
  • 1 cup queso fresco, crumbled
  • 6 lime wedges for garnish
  • Tortilla chips for serving

Method

Step One

Heat the olive oil in a large pot over medium heat. Once the oil is hot, add the chopped onion, garlic, and jalapeno pepper, sauté until the onions soften and become translucent.

Step Two

Add the dried oregano, cumin, salt and pepper into the pot. Stir well and cook for another minute to toast the spices.

Step Three

Pour the chicken broth into the pot and bring the mixture to a simmer. Let it cook for about 15 minutes.

Step Four

Add the finely chopped cilantro and diced tomatoes to the pot. Continuously stir the mixture to ensure the cilantro and tomatoes get fully incorporated into the soup.

Step Five

Reduce the heat to low. Slowly add the lime juice while stirring the soup. Once all of lime juice is incorporated, let the soup simmer for another 10 minutes.

Step Six

Upon serving, place a few slices of avocado at the bottom of the bowl first. Pour the hot soup over the avocados.

Step Seven

Top the soup with crumbled queso fresco.

Step Eight
