Ah, the taste of a Mexican Cilantro Soup, a vibrant concoction simmering in a pot, evokes warm memories. I remember as a child, exploding into laughter at the dinner table, my Irish grandparents narrating tales from a land far away. The earthy aroma of the soup gently wafting through our New England home instilled a sense of comfort and belonging. I cherished these moments as much as I treasured our beloved Mexican Cilantro Soup.

The Inspiration Behind the Recipe
Fast forward a few decades, our dinner table is filled with the innocent giggles of my baby boy and the comforting presence of my fiancee, Laura. Over these years, many of the traditional recipes have been passed down, but Mexican Cilantro Soup remains a favorite. You see, Irish culinary heritage, with its emphasis on heartiness and comfort, is beautifully complemented by New England’s love for fresh, delicate flavors. And this soup – it magically marries these two worlds.
More than Just A Palate Pleaser
But let’s not forget, this stunner of a soup is not just pleasing to the palate. Each reassuring spoonful unveils a wealth of health benefits. The cilantro imparts more than just flavor, it’s extremely rich in antioxidants. On the other hand, avocados add a creamy texture and a boost of healthy fats and fiber. There’s a reason why I boast that my Mexican Cilantro Soup offers comfort in every sense of the word.
Dishes You Must Try Alongside This Recipe
While the Mexican Cilantro Soup sings its own melody, it harmonizes well with other notes too. Consider pairing it with a classic Mexican Chopped Salad for an explosion of flavors, or serve along with Choriqueso, a smoky cheese dip with crispy Chorizo, for a whole new twist to your meal.
Most importantly, as you ladle the soup into warm bowls and pass the steaming pot around, remember what it symbolizes – the joining of love, tradition, and warmth in one hearty meal. From my family to yours, I hope you enjoy this Mexican Cilantro Soup as much as we do.
What You’ll Need
- 4 cups chicken broth
- 1 cup cilantro, finely chopped
- 1 jalapeno pepper, finely chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 ripe tomatoes, diced
- 2 avocados, sliced
- 1/2 cup fresh lime juice
- 1 cup queso fresco, crumbled
- 6 lime wedges for garnish
- Tortilla chips for serving
Method
Step One
Heat the olive oil in a large pot over medium heat. Once the oil is hot, add the chopped onion, garlic, and jalapeno pepper, sauté until the onions soften and become translucent.
Step Two
Add the dried oregano, cumin, salt and pepper into the pot. Stir well and cook for another minute to toast the spices.
Step Three
Pour the chicken broth into the pot and bring the mixture to a simmer. Let it cook for about 15 minutes.
Step Four
Add the finely chopped cilantro and diced tomatoes to the pot. Continuously stir the mixture to ensure the cilantro and tomatoes get fully incorporated into the soup.
Step Five
Reduce the heat to low. Slowly add the lime juice while stirring the soup. Once all of lime juice is incorporated, let the soup simmer for another 10 minutes.
Step Six
Upon serving, place a few slices of avocado at the bottom of the bowl first. Pour the hot soup over the avocados.
Step Seven
Top the soup with crumbled queso fresco.
Step Eight
Serve the soup with tortilla chips and garnish each bowl with a lime wedge. This Mexican Cilantro Soup is ready to enjoy!
