What You’ll Need

  • 1 jalapeno pepper, diced
  • 10 cups vegetable broth

  • 2 avocados, peeled and diced
  • 2 limes, juiced
  • 2 cups diced fresh tomatoes
  • 1.5 cup corn kernels
  • 1.5 cup black beans, rinsed and drained
  • Salt and pepper, to taste

Method

Step One

Begin by heating olive oil in a large pot over medium heat. Once hot, add the chopped onion, mincing the garlic, and adding diced jalapeno pepper. Cook the mixture until the onions become translucent.

Step Two

Add the vegetable broth to the pot and bring the mixture to a boil. After the pot comes to a boil, reduce the heat and let the mixture simmer.

Step Three

To the pot, add the chopped fresh oregano and cilantro. Stir well to distribute the herbs evenly throughout the soup.

Next, add the diced avocados, using caution to avoid mashing them. Following this, you will add the freshly squeezed lime juice.
