With my pasta-smeared apron and a heart full of cherished kitchen memories, I’m Luca, your Gourmet Guru. Born in New Jersey and nourished with a generous serving of Italian-American traditions, my culinary journey has always been about bringing a heaping plate of family heritage to the table, whether it’s a classic spaghetti and meatballs or, in this case, a hearty stack of Miracle Fruit Pancakes with Maple Syrup.
A Taste of Tradition Meets Nutrition
These Miracle Fruit Pancakes with Maple Syrup are dear to me because they beautifully merge my love for homely comfort foods with my nod towards health and wellness. The Miracle Fruit or Synsepalum dulcificum, was a surprising find for me during my years of exploration into diverse cuisines. This fruit, native to West Africa, possesses a unique ability to make sour foods taste sweet, making it a natural, lower-sugar alternative in these pancakes.
Comfort in Every Bite
Each bite of these fluffy, fruit-filled pancakes takes me back to Sunday mornings in my grandparents’ kitchen. But unlike the sweet treats from our traditional Italian breakfast table, these pancakes come with the added benefit of dietary fiber, vitamin C, and a unique antioxidant profile courtesy of the miracle fruit. This is comfort food you can indulge in without any guilt.
These pancakes aren’t radically different from traditional ones, they share the same texture with the extra moistness from the fruit pieces. They find a sweet spot between your classic blueberry pancakes and something more adventurous. Served with a side of eggs benedict or even a healthier apple chicken sausage, they could make for an ideal brunch spread.
What You’ll Need
1 1/2 cups of all-purpose flour
3 1/2 teaspoons of baking powder

1 1/4 cups of milk
1 egg
3 tablespoons of melted butter
1 cup of chopped miracle fruit
1 tablespoon of vegetable oil
1/2 cup of maple syrup
ALLERGENS: wheat, milk, egg
Method
Step One
In a large bowl, mix together the all-purpose flour, baking powder, salt and white sugar. Ensure that these dry ingredients are combined well.
Step Two
In a separate bowl, whisk together the milk, egg and melted butter until smoothly blended.
Step Three
Slowly add the wet ingredients into the dry ingredients, stirring well until you achieve a smooth batter. Be careful not to over mix.
Step Four
Gently fold the chopped miracle fruit into the pancake batter ensuring they are evenly distributed.
Step Five
Heat a large frying pan or griddle over medium heat, and coat it with a thin layer of vegetable oil.
Step Six
Pour about 1/4 cup of the pancake batter onto the heated frying pan or griddle for each pancake. Wait until bubbles form on the surface of the pancake and then flip it over. Both sides should be a light golden brown.
