Why the Salad Works
Although I grew up surrounded by Italian-American cuisine, I’ve come to appreciate and love the flexibility and diversity that salads have to offer. This particular salad, which echoes the vibrancy and freshness of a classic Summer Fruit Salad, combines ingredients that many wouldn’t usually think to mix. And yet, it manages to balance sweet and tangy flavors with a delightful crunch.
Why am I, a grandfather from New Jersey with a love for hearty Italian dishes, adoring of this salad? Because of its undeniably refreshing nature, versatility, and potential health benefits. The selection of fruits not only pep up the dish with bright pops of flavor and color, but are also loaded with fiber, antioxidants, and essential vitamins.
Health Meets Flavor: The Dressing
The White Mustard Dressing that embraces this salad is not an arbitrary choice. Besides resonating harmoniously with the fruity undertones of the dish, it brings its own health benefits to the table. The key ingredient, mustard, is known to be beneficial for digestion and high in antioxidants. When combined with garlic and olive oil, it multiplies the health benefits, making the finished dish not only delicious but also wholesome.

- 1 cup of fresh strawberries, hulled and sliced
- 1 cup of fresh blueberries
- 1 fresh apple, cored and diced
- 1 ripe pear, cored and diced
- 1/2 cup of dried cranberries
- 1/2 cup of walnuts, chopped
- 1/2 cup of feta cheese, crumbled
- For White Mustard Dressing:
- 1/4 cup of white wine vinegar
- 2 tablespoons of Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 1/2 cup of olive oil
Method
Step One
Begin by washing and thoroughly drying the mixed salad greens. Add them to a large salad bowl.
Step Two
Next, prepare your fruits. Wash your strawberries, blueberries, apple, and pear. Hull and slice your strawberries, and add them to the salad bowl. Add the blueberries to the bowl. Core and dice your apple and pear, then add them to the bowl.
Step Three
Now that your fruits are prepared, add your dried cranberries, chopped walnuts, and crumbled feta cheese to the salad bowl. Gently toss everything together to combine.
Step Four
Now, it’s time to make the White Mustard Dressing. To a separate bowl, add the white wine vinegar, Dijon mustard, minced garlic clove, salt, and freshly ground black pepper. Stir or whisk these ingredients together until well blended.
Step Five
Slowly pour the olive oil into the bowl with the rest of the dressing ingredients, continuously stirring or whisking to thoroughly mix everything together.
