What You’ll Need
- 2 cups of dried lentils
- 2 tablespoons of vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon of grated fresh ginger
- 1.5 cups of fresh Moringa leaves
- 1 can of diced tomatoes (14.5 oz)
- 1 teaspoon of turmeric
- 1 teaspoon of cayenne pepper
- 1 tablespoon of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of garam masala
- 6 cups of vegetable broth
- Salt to taste
- 2 tablespoons of fresh lemon juice
- Fresh cilantro for garnish
Method
Step One
Begin with rinsing the lentils under running water. Set them aside for them to drain well.
Step Two
In a large pot, heat up the vegetable oil over medium heat. Add the chopped onion and cook until it becomes soft and translucent.
Step Three
Add the minced garlic and grated ginger to the pot. Cook these for about 1 or 2 minutes, stirring frequently so the garlic does not burn.
Step Four
Stir in the fresh moringa leaves and diced tomatoes into the pot. Allow these to simmer until the tomatoes break down and the moringa leaves begin to wilt.

Season your curry to your liking with salt. Stir in fresh lemon juice for some acidity and brightness. If needed, adjust the seasoning and acidity as per your preference.
