Although, there’s no categorizing this recipe – it’s the ultimate example of Indian-American fusion in my kitchen. What You’ll Need

  • 12 large eggs
  • 2 cups of finely chopped fresh Moringa leaves
  • 1 large red onion, finely chopped
  • 2 ripe tomatoes, chopped
  • 1 green bell pepper, finely chopped
  • 3 cloves of garlic, minced
  • 6 tablespoons of olive oil
  • Salt and black pepper, to taste
  • 1 cup of grated Cheddar cheese

Method

Step One

Start by cracking the 12 large eggs into a bowl. Beat them gently until the yolks and whites are completely combined.

Step Two

Prepare your vegetables by finely chopping 2 cups of fresh Moringa leaves, 1 large red onion, 2 ripe tomatoes, and 1 green bell pepper. Also, mince your 3 cloves of garlic.

Step Three

Heat a large pan on medium-high heat, then add 6 tablespoons of olive oil. Once the oil is hot, sauté the chopped onion, green bell pepper, and minced garlic until they become soft and fragrant.

Step Four

Add the chopped tomatoes to the pan, stir, and let them cook for 3 to 5 minutes until they are soft.

Step Five

Now, add the finely chopped Moringa leaves to the pan and sprinkle with a pinch of salt and black pepper. Stir to combine all the ingredients and let it cook for another 2-3 minutes.

Step Six

Pour the beaten eggs evenly over the vegetable mixture. Let the eggs cook for a few minutes until they start to set at the edges. Sprinkle the top with 1 cup of grated cheddar cheese.

Step Seven

Lower the stove’s heat to medium. Cover the pan with a lid and let the omelette cook for a few more minutes, until the eggs have fully set and the cheese has melted.

Step Eight

Check if the omelette is ready by gently lifting the edge with a spatula. If it’s golden brown, it’s done. Gently slide the omelette onto a serving plate.
