What You’ll Need

  • 2 cups of fresh moringa leaves
  • 6 cups of chicken broth
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 1 cup of chopped tomatoes
  • 2 cups of chopped mixed fruits (such as apples, oranges, pineapple)
  • 1 tablespoon of fresh ginger, grated
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • Salt to taste
  • 1 teaspoon of black pepper
  • 1 tablespoon of fresh lemon juice

Method

Step One

Start by heating the vegetable oil in a large soup pot over medium heat. Add the diced onion and minced garlic to the pot and sauté for around 5 minutes or until the onion becomes translucent.

Step Two

Add the fresh ginger, turmeric powder, cumin powder, coriander powder, and black pepper to the pot. Mix everything together and continue to sauté everything for another 2 minutes, or until the spices become fragrant.

Step Three

Next, add the chopped tomatoes to the pot. Cook for around 5 minutes, or until the tomatoes have softened and released all of their juices.

Step Four

Now, stir in the chopped mixed fruit. Sauté everything for another few minutes, allowing the fruit to release its juices and combine with the spices in the pot.

Step Five

Add the chicken broth to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20 minutes.

Step Six

While the soup is simmering, wash the moringa leaves thoroughly and add them to the pot. Let them simmer in the soup for about 5 to 10 minutes, or until they are tender and have imparted their flavor to the soup.

Step Seven

Finally, season the soup with salt to taste, and add the fresh lemon juice. Simmer for another 2 minutes to allow the flavors to meld together. Then, your Moringa Leaf Soup is ready to serve and enjoy!
