What You’ll Need

  • 2 cups of fresh Moringa leaves
  • 2 tablespoons of vegetable oil
  • 1 large onion, sliced
  • 2 cloves of garlic, minced
  • 1 inch of fresh ginger, grated
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup of diced pineapple
  • 1 tablespoon of soy sauce
  • 1 tablespoon of vinegar
  • 1 pinch of pepper
  • 1 pinch of salt
  • 1 tablespoon of lemon juice
  • 1 cup of chopped tomatoes
  • 1/2 cup of chopped cilantro for garnish

Method

Step One

Start by thoroughly washing the 2 cups of Moringa leaves under running water. After that, drain them to remove excess water.

Step Two

Take a large frying pan and put it over medium heat. Add 2 tablespoons of vegetable oil to the pan and allow it to heat up.

Step Three

Once the oil is hot, add 1 large sliced onion, 2 minced cloves of garlic and 1 inch of grated ginger to the pan. Stir fry until the onion turns translucent.

Step Four

Next, add 1 each of diced red, green and yellow bell peppers to the pan, cooking while stirring for a minute so that the peppers can soften.

Step Five

Then add 1 cup of diced pineapple, 1 tablespoon each of vinegar and soy sauce, a pinch of salt and pepper to the pan. Stir everything together so that the flavors blend properly.

Step Six

Stir in the Moringa leaves, 1 cup of diced tomatoes, and squeeze 1 tablespoon of lemon juice over everything. Stir fry for another couple of minutes until everything is combined and Moringa leaves are wilted.

Step Seven

Turn off the heat and transfer the Stir Fry to a serving dish. Just before serving, garnish the dish with half a cup of chopped cilantro to add freshness.
