What You’ll Need

  • 1 cup Moth Beans
  • 1/2 teaspoon Turmeric Powder
  • 2 tablespoons Olive Oil
  • 2 tablespoons Ginger, minced
  • 2 cloves Garlic, minced
  • 1 large Onion, diced
  • 2 Green Chilies, finely chopped
  • 2 Tomatoes, diced
  • 1 cup Water
  • 2 teaspoons Cumin Seeds
  • 1/2 teaspoon Asafoetida (Hing)
  • 2 teaspoons Coriander Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Red Chili Powder
  • Salt, to taste
  • 2 tablespoons Cilantro (Coriander), chopped for garnish
ALLERGENS: Moth Beans, Olive Oil, Garlic, Onion

Method

Step One


First, soak your moth beans in water overnight. Afterward, rinse them well, transfer to a pressure cooker, add water and turmeric powder. Cook them until they’re soft.

Step Two


As your beans cook, heat the olive oil in a large pan. Once hot, add cumin seeds and asafoetida. Fry until the seeds start to pop.

Step Three


Add the finely chopped green chiles, minced garlic, and minced ginger into the pan. Sauté until the raw smell disappears.

Step Four


Now, add the diced onion to the pan. Cook until the onion becomes translucent.

Step Five


Include the diced tomatoes to the pan. Cook until they are soft.

Step Six


Next, add coriander powder, garam masala, and red chili powder to the mixture. Stir well to combine all the ingredients.

Step Seven


Once your beans are cooked, add them to the pan. Mix well and add salt to taste. Allow the mixture to simmer for 10-15 minutes for the flavors to meld together.
