What You’ll Need
- 12 Mouse Melons
- 1 cup Watermelon, cut into bite-sized pieces
- 1 cup Pineapple, cut into bite-sized pieces
- 1 cup Kiwi, cut into bite-sized pieces
- 1 cup Strawberry, cut into bite-sized pieces
- 6 Lemon, thinly sliced
- 1 cup Balsamic Vinegar
- 1/4 cup Honey
- 6 wooden Skewers
Method
Step One
Start by preparing all the fruits. Wash the 12 mouse melons, 1 cup of the watermelon, pineapple, kiwi, strawberries and thin slices of lemon. Cut the watermelon, pineapple, kiwi and strawberries into bite-sized pieces. Set aside.
Step Two
The next step is to create the balsamic reduction. Heat the 1 cup of balsamic vinegar in a small saucepan over medium heat. Allow the vinegar to come a boil, then reduce the heat and let simmer until it has reduced by half. This should take about 20 minutes.
Step Three
Now, stir in the 1/4 cup of honey into the balsamic reduction. Mix it well until the honey is fully dissolved. Let it simmer for another 10 minutes, until the mixture thickens.
Step Four
Remove the balsamic reduction from heat and let it cool. Once cooled, the reduction should be thick and syrupy.
Step Five
Now, it’s time for the fun part! Put the mouse melons and bites-sized fruit pieces onto the skewers. You can arrange them in any way you want, but I suggest starting with a piece of lemon, followed by a piece of each fruit, then a mouse melon. Repeat this arrangement until the skewer is filled.
