What You’ll Need

  • 12 Mouse Melons, cut into halves
  • 1 Cucumber, peeled and cut into chunks
  • 1 cup of Fresh Mint Leaves
  • 1/2 cup of Freshly Squeezed Lime Juice
  • 6 cups of Sparkling Water
  • 1 cup of White Granulated Sugar
  • Ice Cubes

Method

Step One

Take the mouse melon halves and cucumber chunks and put them into a blender. Puree until smooth.

Strain the puree through a fine mesh sieve into a large bowl, pressing down using a spoon to extract as much liquid as possible.

In a small saucepan, combine the sugar with 1 cup of water and bring to a boil. Stir until the sugar is completely dissolved. Allow this simple syrup to cool.

Step Four

Add the fresh mint leaves to the sugar syrup, muddling them slightly to release their flavor. Allow this mixture to steep for 5 minutes.

Step Five

Combine the mouse melon and cucumber juice with the mint-infused simple syrup, freshly squeezed lime juice, and the sparkling water in a large jug. Stir well to combine.
