What You’ll Need

  • 3 pounds of mushrooms
  • 2 large onions
  • 4 cloves of garlic
  • 1 cup of sunflower oil
  • 4 tablespoons of butter
  • 2 tablespoons of soy sauce
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 cup of breadcrumbs
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of fresh dill, chopped
  • 3 medium eggs
  • 1/2 cup of flour
  • 1 cup of chicken broth
ALLERGENS: Mushrooms, garlic, sunflower oil, butter, soy sauce, breadcrumbs, eggs, flour, chicken broth

Method

Step One

Begin by cleaning your mushrooms and trimming off the stems. Slice the mushrooms thinly, chop the onions and garlic finely.

Step Two

In a large pan, combine the sunflower oil and butter over medium heat. Once the butter has melted, add the chopped onions and garlic. Cook until the onions turn translucent and the garlic is fragrant.

Step Three

Add the sliced mushrooms to the pan. Season with salt and pepper, and cook until the mushrooms release their moisture and become tender.

Step Four

While the mushrooms are cooking, lightly beat the eggs in a separate bowl. Set this aside.

Step Five

In a third bowl, mix the breadcrumbs with the chopped fresh parsley and dill.

Step Six

Once the mushrooms are cooked and have absorbed the flavours of the onion and garlic, add the soy sauce and chicken broth. Mix well and let it simmer for about 5 minutes.

Step Seven

Gradually sprinkle the flour over the mushroom mixture, stirring well to make sure it’s evenly incorporated and no lumps form.

Step Eight

Slowly pour the beaten eggs into the mushroom mixture, stirring constantly. The eggs will start to cook immediately, forming small curds throughout the mixture.

Step Nine

Lastly, add the breadcrumb mixture to the pan. Stir well to combine everything. Remove the pan from the heat and let it cool.

Step Ten
