What You’ll Need
- 2 cups lentils
- 4 cups water
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric
- 1 1/2 teaspoon cumin
- 1 1/2 teaspoon coriander
- 1/2 teaspoon cayenne pepper
- 1 cup tomatoes, diced
- 2 cups Musk Mallow leaves, washed and finely chopped
- Salt to taste
- 2 tablespoons lime juice
- 6 cups cooked rice or six pieces of naan bread
Method
Step One
Start by rinsing the lentils thoroughly till the water runs clear. Then, in a large saucepan, add the lentils along with 4 cups of water. Bring the water to a boil over high heat then reduce it to a simmer. Let the lentils cook for about 20-30 minutes or until they’re tender and cooked through.
Step Two
While the lentils are simmering, heat the vegetable oil in another large pan over a medium heat. Add the finely chopped onion to the pan and sauté until it becomes soft and translucent.
