What You’ll Need

  • 2 pounds of fresh carrots
  • 1/2 cup of honey
  • 1/4 cup of myrtle leaves, finely chopped
  • 1 tablespoon of ground cinnamon
  • 2 tablespoons of unsalted butter
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
ALLERGENS: Honey, Butter

Method

Step One

Start by peeling the 2 pounds of fresh carrots before cutting them into thick slices, roughly about half an inch. To ensure that the carrots cook evenly, aim to cut all the slices the same width.

Step Two

In a large sauté pan over medium heat, melt the 2 tablespoons of unsalted butter. Be sure not to let it turn brown. Add the sliced carrots to the pan once the butter is fully melted and stir to coat them evenly.

Step Three

Next, add the 1/2 cup of honey, 1 tablespoon of ground cinnamon, 1/4 cup of finely chopped myrtle leaves, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir well to combine all the ingredients and ensure the carrots are well-coated with the mixture.

Step Four

Cover the sauté pan and let the carrots cook over medium heat for about 10-15 minutes or until they are tender. You might want to check occasionally and give them a siring to prevent sticking at the bottom of the pan.

Step Five

Remove the cover from the pan and increase the heat to high. Allow the glaze to reduce until thickened, which should approximately take 5-7 minutes. Remember to stir occasionally to prevent the glaze from scorching.

Step Six

Once the glaze is thick and syrupy, turn off the heat. The carrots should be well glazed and tender. Serve your Myrtle Cinnamon and Honey Glazed Carrots hot as a splendid side dish to complement your main course.
