What You’ll Need

  • 1.5 lbs pork shoulder, cubed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons New Mexico red Chile powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cans (15.5 oz each) white hominy, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced (for garnish)
  • 1 radish, thinly sliced (for garnish)
ALLERGENS: Pork, olive oil, garlic

Method

Step One

In a large pot, heat the olive oil over medium heat. Add the cubed pork shoulder and cook until it is brown on all sides.

Step Two

Add the chopped onion and minced garlic to the pot. Cook until the onion has softened and the garlic is fragrant.

Step Three

Stir in the New Mexico red Chile powder, dried oregano, ground cumin, salt, and black pepper. Cook for a few minutes, allowing the spices to toast and become aromatic.

Step Four

Add the drained and rinsed white hominy to the pot. Stir well to combine it with the pork and spices.

Step Five

Pour in the low-sodium chicken broth, making sure to scrape the bottom of the pot to release any bits stuck to it.

Step Six

Add the can of diced tomatoes with green chilies. Stir the mixture well to combine all the ingredients.

Step Seven

Bring the posole to a simmer and let it cook for about an hour, or until the pork is tender and the flavors have melded together.

Step Eight

Before serving, stir in the juice from one lime and the chopped fresh cilantro.

Step Nine
