There’s no doubting that I adore my hearty mountain fare, but every now and then, I like to mix it up with different flavors and that’s why I am so drawn to the Njangsa Shrimp Stir Fry. Inspired by my partner Gordon’s love for tropical fruit combined with my specialty in seafood, this dish delivers a punch of vibrant, robust flavors that invoke visions of summer.

What You’ll Need

  • 1.5 lbs of shrimp, peeled and deveined
  • 2 tablespoons of njangsa powder
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 1/2 cup of pineapple chunks
  • 1/2 cup of mango chunks
  • 1/4 cup of soy sauce
  • 2 tablespoons of honey
  • 1 tablespoon of cornstarch
  • 1/4 cup of cold water
  • Freshly ground black pepper, to taste
  • Salt, to taste
ALLERGENS: shrimp, soy

Method

Step One

Begin by seasoning the shrimp with salt, black pepper, and 1 tablespoon of njangsa powder. Make sure each shrimp is evenly coated with the seasoning. Set the shrimp aside to marinate for about 15 minutes to allow the flavors to be absorbed fully.

Step Two

Heat the vegetable oil in a large wok or frying pan over medium heat. Once the oil is hot, add the minced garlic and sauté until it becomes fragrant. Be careful not to burn the garlic.

Step Three

Add the sliced onion and bell peppers into the pan. Stir fry for about 4-5 minutes or until the vegetables start to soften.

Step Four

Add in the marinated shrimp and stir fry until they turn pink. This should take about 2-3 minutes. Remember not to overcook the shrimp as they can become rubbery.

Step Five

Reduce the heat to low and add the pineapple and mango chunks to the pan. Stir well to combine the ingredients.

Step Six

In a small bowl, combine the soy sauce, honey, the remaining njangsa powder, and cold water. Stir in the cornstarch until it is fully dissolved. Pour this sauce over the shrimp and vegetable mixture.

Step Seven

Increase the heat to medium high and bring the sauce to a simmer. Continue to cook and stir until the sauce has thickened – about 2-3 minutes.

Step Eight

Season the stir fry with additional salt and black pepper if needed. Remove the pan from the heat.

Step Nine

Your Njangsa Shrimp Stir Fry is ready to be served! Enjoy it hot with steamed rice or noodles for a complete meal.
