What You’ll Need

  • 6 pieces of white flesh fish (like cod or snapper)
  • 2 tablespoons of Olida herb, finely chopped
  • 1/4 cup of olive oil
  • 2 lemons, zested and juiced
  • 2 cloves of garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon of honey
  • 3 tablespoons of melted butter
  • 6 thin lemon slices for garnishing
  • Fresh herbs for garnishing (parsley or cilantro)

Method

Step One

Begin by cleaning the fish pieces properly. Pat them dry and keep them aside.

Step Two

For the herb-infused oil, take a bowl and mix together the finely chopped Olida herb, olive oil, the zest and juice of 2 lemons, minced garlic, honey, salt, and black pepper. Stir well until you have a well-combined mixture.

Step Three

Marinate the fish pieces in this herb-infused oil. Ensure each piece is thoroughly coated. Let the fish sit in the marinade for at least 30 minutes. If you have time, let it marinate in the refrigerator for 1-2 hours, as this will help the fish absorb maximum flavor.

Preheat your grill to medium-high heat. You can grill the fish either on an outdoor grill for a smoky flavor or an indoor grill pan. If necessary, lightly oil the grill grates to prevent the fish from sticking.

Step Five
