What You’ll Need

  • 6 large onions
  • 1 cup of cocktail onions
  • 4 cloves of garlic
  • 2 tablespoons of olive oil
  • 1 stick of unsalted butter
  • 1 teaspoon of sugar
  • 2 cups of dry white wine
  • 8 cups of beef broth
  • 1/2 teaspoon of dried thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 1 baguette, sliced
  • 2 cups of shredded Gruyere cheese
ALLERGENS: Onions, garlic, olive oil, butter, wine, beef broth, wheat (baguette), dairy (Gruyere cheese)

Method

Step One

First, peel and chop the 6 large onions. Mince the 4 cloves of garlic.

Step Two

Heat the 2 tablespoons of olive oil and 1 stick of unsalted butter in a large pot over medium heat. Once the butter has melted, add the chopped onions, garlic, and 1 teaspoon of sugar. Cook until the onions are caramelized, which should take about 25 to 30 minutes. Make sure to stir occasionally to prevent burning.

Step Three
