Orange and Carrot Soup

When it comes to comfort food that warms both heart and soul, this Orange and Carrot Soup tops my list. It’s a dish that effortlessly blends the sweetness of oranges with the robust earthiness of carrots, making it a wonderful go-to as the temperature starts to dip. I’m always seeking out ways to blend fresh ingredients with flavors inspired by my love for the great outdoors, and this recipe hits the mark every single time.

A Symphony of Flavors

What I love most about this Orange and Carrot Soup is how the ingredients come together in a harmonious balance. The bright, citrus notes from the oranges perfectly complement the natural sweetness of the carrots, while the onion, garlic, and vegetable broth provide a rich, savory base. The addition of ginger adds just the right amount of warmth, turning this simple soup into something quite extraordinary.

Health Benefits

Beyond its incredible flavor, this soup is a nutritional powerhouse. Carrots are loaded with beta-carotene, which is fantastic for eye health, and oranges are brimming with vitamin C, a crucial nutrient for a robust immune system. A splash of orange juice enhances these benefits while adding an extra layer of zest. The optional heavy cream can make this dish lush and velvety, but if you’re looking to keep things light, feel free to leave it out. Either way, you’ll have a wholesome meal that’s as nutritious as it is delicious.

What You’ll Need

  • 4 large oranges
  • 6 large carrots
  • 1 medium-sized onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 cup orange juice
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)
  • Fresh parsley or cilantro for garnish
ALLERGENS: Garlic, Olive Oil, Vegetable Broth, Heavy Cream (optional)

Method

Step One

Wash and peel the carrots, then chop them into small pieces. Peel and dice the onion, and peel and mince the garlic cloves.

Step Two

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.

Step Three

Add the chopped carrots to the pot and cook for another 5 minutes, stirring occasionally.

Step Four

While the carrots are cooking, juice the 4 large oranges to obtain fresh orange juice. Combine this with the 1 cup of orange juice.

Step Five

Pour the vegetable broth and the combined orange juice into the pot, then add the ground ginger. Stir well and bring the mixture to a boil.

Step Six

Once it reaches a boil, reduce the heat to low and let it simmer for about 20-25 minutes, or until the carrots are completely tender.

Step Seven

Remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth, then return to the pot.

Step Eight

Season the soup with salt and pepper to taste. If desired, stir in the heavy cream for a richer texture.

Step Nine

Ladle the soup into bowls and garnish with fresh parsley or cilantro before serving. Enjoy your delicious Orange and Carrot Soup!
