Why I Love Turkish Oven-Baked Lamb Ribs

There’s a certain magic in stepping outside your comfort zone, especially when it comes to cooking. Although I traditionally spend my time whipping up Italian-American classics like a hearty spaghetti or platter of meatballs, sometimes it’s exciting to travel a bit further from home. In those instances, I often find myself falling in love with other exceptional dishes from around the globe, such as this Turkish specialty, the mouth-watering Oven-Baked Lamb Ribs.

Discovering the Oven-Baked Lamb Ribs

What is it about this Turkish recipe that’s struck me? I think it’s the harmony of flavors and the way it seems to elevate the simple, homey ingredients to something truly extraordinary. Much like the food from my Italian grandparents, every element in this dish comes together to create a symphony in your mouth. The succulent lamb ribs are seasoned with vibrant herbs and spices, creating a tantalizing sensory experience.

I discovered this recipe through my food travels and was instantly hooked – a sentiment shared by the legendary chef Yotam Ottolenghi. The flavors in this dish are reminiscent of Ottolenghi’s vibrant and diverse style of cooking.

Perfect Parings

While Oven-Baked Lamb Ribs are a feast in themselves, they can also be perfectly paired with a variety of dishes. For instance, they go superbly well with Mediterranean style couscous, generously speckled with herbs and raisins. A side of tangy tzatziki or baba ganoush can provide a cooling contrast to the dish. For a heartier option, these ribs would pair perfectly with creamy garlic mashed potatoes, creating a meal that’s comforting yet exotic.

Whether you’re entertaining guests for a special occasion or simply want a dish that will impress your family, the Oven-Baked Lamb Ribs are a winner in my book. Let your culinary prowess shine through with this recipe, and see just how exciting it is to step outside of traditional favorites and explore the bountiful world of international cuisine.

What You’ll Need

  • 3 pounds of lamb ribs
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of paprika
  • 1 tablespoon of oregano
  • 1 tablespoon of thyme
  • 1 tablespoon of rosemary
  • 2 onions, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups of beef broth
  • 2 tablespoons of tomato paste
  • 1 cup of red wine
ALLERGENS: None

Method

Step One

Preheat your oven to 350°F (180°C). While waiting for the oven to heat, place your lamb ribs in a large mixing bowl.

Step Two

Drizzle the ribs with 2 tablespoons of olive oil. After that, add in the minced garlic, 1 tablespoon of salt, 1 teaspoon of black pepper, 1 tablespoon of paprika, and 1 tablespoon each of oregano, thyme, and rosemary. Mix it all together until the ribs are evenly coated with the spices.

Step Three

Next, prepare your vegetables. Dice 2 onions, 2 carrots, and 2 celery stalks. Add these to a large oven-safe pan or casserole dish and mix them together.

Step Four

Place your seasoned lamb ribs on top of the mixed vegetables in your casserole dish.

Step Five

In a separate bowl, whisk together 2 tablespoons of tomato paste and 4 cups of beef broth until well combined. Pour this mixture over your lamb and vegetables in the casserole dish.

Step Six

Pour 1 cup of red wine over the lamb and vegetables. Make sure the wine is evenly distributed.

Step Seven

Cover the dish with aluminum foil and place it in your preheated oven. Bake for about 2.5 to 3 hours, until the lamb is tender and pulls apart easily.

Step Eight

Remove your Oven-Baked Lamb Ribs from the oven and let it cool slightly before serving. Enjoy this hearty dish with family and friends!
