What You’ll Need

  • 6 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1 tablespoon garlic, minced
  • 1/2 cup parsley, chopped
  • 2 tablespoons butter
  • 1 cup Hamburg parsley, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 apples, cored and sliced
  • 1 pear, cored and sliced
ALLERGENS: chicken, olive oil, garlic, butter, apples, pear

Method

Step One

Season the chicken breasts equally with salt and pepper.

Step Two

Warm up the olive oil in a large pan over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes on each side, or until golden brown. Remove the chicken from the pan and set it aside.

Step Three

In the same pan, add the sliced apples and pear. Cook for 2-3 minutes, or until they start to caramelize.

Step Four

Pour in the white wine, stirring to deglaze the pan. After the wine is reduced by half, add the chicken broth.

Step Five

Add the minced garlic, chopped parsley, and Hamburg parsley. Simmer for a few minutes until the sauce starts to thicken.

Step Six

Return the chicken to the pan, spooning the sauce over the chicken. Allow the chicken to simmer in the sauce for another 6-8 minutes, or until the chicken is cooked all the way through.

Step Seven

Incorporate the butter, stirring until it is fully melted into the sauce. Finish the dish off with the lemon juice and lemon zest, and salt to taste.
