What You’ll Need

  • 6 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 4 ounces prosciutto, thinly sliced
  • 1 medium-sized onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup white wine
  • 1 1/2 cups chicken broth
  • 2 cups fresh or frozen peas
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh parsley, chopped

Method

Step One

Start by seasoning the chicken breasts with salt and pepper.

Step Two

Next, heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook until they are golden brown on both sides. Remove the chicken breasts from the skillet and set them aside.

Step Three

Add the prosciutto to the skillet and cook until it is crispy. Remove the prosciutto from the skillet and set it aside as well.

Step Four

Now in the same skillet, add the chopped onion and minced garlic and sauté until the onion is translucent.

Step Five

When the onion is ready, pour in the white wine. Let it simmer until the wine is reduced by half. This will de-glaze the pan and collect all the flavors left from the chicken and prosciutto.

Step Six

Then, add the chicken broth to the skillet and bring it to a simmer. At this point, you can add the chicken breasts back into the skillet.

Step Seven

Cover the skillet and let everything simmer for about 15 to 20 minutes, or until the chicken is fully cooked.

Step Eight

After the chicken is cooked, add the peas, lemon juice, and crispy prosciutto to the skillet.

Step Nine

Let everything cook for a couple more minutes so that the peas are heated through.

Step Ten
