What You’ll Need

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 and 1/2 cup buttermilk
  • 1/4 cup melted unsalted butter
  • 1 teaspoon pandan extract
  • 1 cup diced mixed fruit (e.g., strawberries, blueberries, kiwi)
  • 1/2 teaspoon vegetable oil (for pan)
  • 1 tablespoon honey (for serving)

Method

Step One

In a large mixing bowl, combine your dry ingredients: 2 cups all-purpose flour, 1/4 cup white sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Stir these together until they’re fully combined.

Step Two

Step Four

Next, fold 1 cup of diced mixed fruit into your pancake batter. Make sure these bits of fruit are spread evenly throughout.

Step Five

Heat a non-stick frying pan over medium heat and add 1/2 teaspoon vegetable oil to coat the bottom of the pan.

Step Six

For each pancake, pour about 1/4 cup of batter into your heated pan. Cook until you see bubbles appear on the surface of the pancake, then flip it over and cook until it’s golden brown.

Step Seven
