If I were asked to name a dessert recipe that has managed to combine the international appeal of Italian desserts with an exotic Asian twist, my answer would be a compelling ‘Pandan Panna Cotta’. When crafting this recipe, I found myself humming a sacred tune from the theatres of familial gatherings and whispering of tradition, that has been passed down generations. Pandan has also been dubbed as the ‘Asian Vanilla’ in the culinary world. But, despite this, I would hasten to claim that it has a flavor that’s unique, and challenging to compare directly. For those new to this taste, a Pandan Panna Cotta could be their perfect initiation.

Health and desserts don’t usually go hand in hand, but that’s not entirely accurate with our Pandan Panna Cotta. We all know that everything should be had in moderation, of course, but when it comes to comparing, you’ll find that pandan is a superstar. It has been used in traditional medicine for years, and modern studies have shown that indeed, pandan has properties that assist in managing blood pressure and even controlling blood sugar levels. I often find myself serving this delightful fruity dessert after a hearty meal of my New England lobster roll or individual Shepherds’ pies. What You’ll Need

  • 1 tablespoon of unflavored gelatin
  • 2 cups of heavy cream
  • 1/2 cup of sugar
  • 2 tablespoons of pandan juice
  • 1 cup of milk
  • 1 teaspoon of vanilla extract
  • Assorted fresh fruits for garnish

Method

Step One

First, sprinkle the unflavored gelatin over the pandan juice in a small bowl. Allow this to sit for a few minutes until the gelatin becomes soft.

Step Two

While waiting for the gelatin to soften, combine the heavy cream, sugar, and milk in a saucepan. Cook over medium heat, stirring frequently to ensure the sugar has completely dissolved.

Step Three

Once the sugar is completely dissolved, remove the cream mixture from heat. Add the softened gelatin into the mixture, stir until the gelatin has completely dissolved in the warm cream mixture. It is very important to make sure all the gelatin dissolves at this stage in order to create a smooth panna cotta

Step Four

After the gelatin has dissolved, add the pandan juice and vanilla extract to the cream mixture. Stir until everything is well combined. The pandan juice will give the panna cotta a bright green color and a distinct pandan flavor.

Step Five

Once the pandan panna cotta mixture is evenly combined, pour it into individual ramekins or a silicone mold. Put them into the fridge and allow them to set for at least 4 hours, or overnight if possible.

Step Six

When the pandan panna cotta has set and you’re ready to serve, garnish with the assorted fruits and enjoy!
