What You’ll Need
- 1 cup whole milk
- 1/2 cup vegetable oil
- 1 teaspoon salt
- 2 cups tapioca flour
- 2 eggs
- 1 1/2 cups grated parmesan cheese
Method
Step One
Preheat your oven to 450 degrees. Grease a mini muffin tin and set it aside.
Step Two
In a large saucepan over medium heat, combine the milk, oil, and salt. Bring the mixture to a gentle boil, stirring occasionally until small bubbles appear at the surface.
Step Three
Remove from heat as soon as you see big bubbles forming and add the tapioca flour. Stir the mixture until you get a gooey and quite elastic mixture. Set aside and let it cool for a few minutes.
Step Four
When the mixture is cool enough to handle, beat in the eggs one at a time until fully incorporated, then beat in the grated Parmesan cheese. The dough is supposed to be sticky and stretchy.
Step Five
Using a greased spoon, put rounded, heaped portions into the muffin tin. Alternatively, you can use a piping bag to pipe swirls of dough into each section of the muffin tin.
Step Six
Put the tray into the oven and turn the heat down to 350 degrees. Bake for 15-20 minutes or until the top starts to get golden.
Step Seven
Remove from oven and let the Pão de Queijo cool just enough to handle. Serve hot.
