What You’ll Need

  • 2 lbs of beef chuck, cut into 1-inch cubes
  • 2 tablespoons of sweet paprika
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 28 ounces of diced tomatoes (1 can)
  • 4 cups of beef broth
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and cut into 1-inch cubes
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of all-purpose flour (for thickening, optional)
  • 1/4 cup of water (for thickening, optional)
ALLERGENS: beef, garlic

Method

Step One

Season the beef cubes with the sweet paprika, smoked paprika, salt and black pepper. Give it a good mix ensuring that the meat is well coated with the spices. Set aside for a few minutes to marinate.

Step Two

Heat the vegetable oil in a large pot over medium heat. Add the marinated beef to the pot and brown on all sides, this should take only a few minutes. Once browned, remove the beef cubes from the pot and set aside.

Step Three

In the same pot, add the chopped onion, minced garlic, diced green and red bell peppers. Sauté for about 5 minutes, or until the vegetables are softened.

Step Four

Return the browned beef back to the pot with the sautéed vegetables. Add the can of diced tomatoes and the beef broth, stir everything together.

Step Five

Add the sliced carrots and cubed potatoes to the pot. Stir well ensuring that everything is combined. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour and 30 minutes, or until the beef is tender.

Step Six

If you prefer your stew thicker, mix the all-purpose flour with 1/4 cup of water until smooth in a separate bowl. Gradually stir this mixture into the stew, let it simmer for another 10 minutes or until the stew has thickened to your liking.
