What You’ll Need
- 2 cups of fresh raspberries
- 1 cup of fresh strawberries
- 1 cup of fresh blackberries
- 1/2 cup passion fruit pulp
- 1 1/2 cup of white sugar
- 1 cup of water
- 1 tablespoon of fresh lemon juice
Method
Step One
Start by washing the fresh raspberries, strawberries and blackberries under cold water. Ensure all the fruits are clean before proceeding to the next step.
Step Two
In a blender or a food processor, combine the washed berries and passion fruit pulp. Blend the fruits until you obtain a smooth puree.
Step Three
In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar completely dissolves making a syrup. Let this syrup cool slightly.
Step Four
Once the syrup has slightly cooled, add it to the blended fruit puree in the blender. Also, add the fresh lemon juice. Blend again until all the ingredients are thoroughly mixed.
Step Five
Once the mixture is well combined, transfer it into a large bowl and cover it tightly with plastic wrap. Refrigerate this mixture for at least 2 hours, or until it is completely chilled.
Step Six
After chilling, pour the mixture into an ice cream maker and churn it according to the manufacturer’s instructions until it is the consistency of soft serve.
Step Seven
Empty the churned sorbet into a lidded container. Press a piece of wax or parchment paper against the surface of the sorbet to prevent ice crystals from forming. Freeze for at least 4 hours before serving.
Step Eight
