I’ve always had a soft spot for dishes that are playful, refreshing and pack a serious punch in the flavor department – and let me tell you, the Passion Berry Fruit Salad certainly doesn’t disappoint. This delightful combination of strawberries, blueberries, raspberries, kiwi, passion fruit, mango, lime juice, honey and a touch of mint, results in a rainbow fruit medley that just screams California sunshine.

Passion Berry Fruit Salad

A Treat for the Senses

The reason I love the Passion Berry Fruit Salad has as much to do with the look and aroma as it does with the taste. Each spoonful unveils a delightful medley of hues nestled between the soft pastels of the mango and the striking red of the strawberries. The scent, too, is comforting – a pleasing mix of fresh fruits, a hint of the tropics through the passion fruit, and an uplifting dash of freshness from the mint leaves.

But of course, the real hero is the taste. The sweetness of the strawberries, blueberries, and mango simply sings in your mouth, while the slightly tart raspberries and the unmistakable tang of kiwi provide an exciting contrast. The hint of lime juice and honey add the perfect finishing touch, balancing the vivid flavors and leaving you craving for more.

Health Benefits

Another reason why I adore this recipe is the nutritional profile it brings to the table – literally. It’s a veritable powerhouse of vitamins and nutrients, perfect for those of us who are trying to incorporate a bit of West Coast health-consciousness into our daily meals. From strawberries, which are known for their high vitamin C content (WebMD), to mangoes, which provide plenty of vitamin A, this salad has got you covered. The mint aids in digestion, while the honey, being a natural sweetener, allows for a yummy treat without the guilt.

More Than Just a Salad

Aside from enjoying this salad on its own, you can also pair it with other dishes for a complete meal. Grilled chicken or seafood would make a fantastic accompaniment. If you’d like to stick with a tropical theme, you could serve it alongside a tangy Hawaiian chicken sausage. It also strikes up a beautiful balance when paired with a glass of crisp California Chardonnay.

In the end, savoring this Passion Berry Fruit Salad is like taking a bite of the lush, sun-drenched valleys of California – a refreshing journey that’s absolutely invigorating for your palate.

What You’ll Need

  • 2 cups of diced fresh strawberries
  • 1 cup of blueberries
  • 1 cup of raspberries
  • 1 cup of peeled, diced kiwis
  • 2 passion fruits
  • 1 medium peeled, pitted and diced mango
  • 1 tablespoon of fresh lime juice
  • 2 tablespoons of honey
  • 1 teaspoon of fresh mint leaves, finely chopped
ALLERGENS: Kiwi, Passion Fruit, Mango, Honey

Method

Step One

Start by washing all the fruit thoroughly under cold running water. Give special attention to berries as they hold a lot of dust and dirt in their crevices.

Step Two

Next, cut the strawberries into dices. This can be done by removing the leafy part, cutting them into halves, and then chopping them down further into smaller pieces.

Step Three

Gently peel and dice the kiwis. Once peeled, slice each one into half and cut out the core. Then chop them into small, bite-sized pieces.

Step Four

For the passion fruits, cut each one in half. Use a spoon to scoop out the pulp and reserve it. Be careful not to lose any juice while doing this.

Step Five

Peel and dice the mango. Start by slicing off the two cheeks, scoring them into a grid-like pattern without cutting through the skin, then inverting them and carefully cutting away the chunks.

Step Six

Next, combine all the prepared fruits in a large bowl: the diced strawberries, blueberries, raspberries, diced kiwis, passion fruit pulp, and diced mango.

Step Seven

In a small bowl, whisk together the fresh lime juice and honey until they’re well combined. This will act as your salad dressing.

Step Eight

Drizzle the honey-lime dressing over the prepared fruit salad. Lightly toss everything together ensuring that all the fruit chunks get a good coating of the dressing.

Step Nine

Finally, sprinkle the finely chopped fresh mint leaves over the salad for a refreshing and aromatic finish. Serve immediately or refrigerate before serving.
