What You’ll Need

  • 2 cups passion fruit pulp
  • 1 cup granulated sugar
  • 2 ½ cups heavy cream
  • 1 ½ cups full-fat milk
  • 6 large egg yolks
  • 1 tsp pure vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • ½ cup confectioners’ sugar

Method

Step One

Begin by whisking together the egg yolks and granulated sugar in a large bowl until it becomes a lighter color and is well combined.

Step Two

In a saucepan, combine the passion fruit pulp, heavy cream, and full-fat milk. Stir this mixture over medium heat until it just begins to simmer.

Step Three

Gradually pour the hot fruit and cream mixture into the egg yolk and sugar mixture, stirring continuously so that the egg yolks do not cook. Once all of the hot mixture has been added, pour everything back into the saucepan.

Step Four

Continue stirring the mixture over medium heat until it thickens and can coat the back of a spoon. This should take about 10 minutes. Once thickened, remove it from heat.

Step Five

Once the mixture has cooled slightly, stir in the vanilla extract. Cover the ice cream mixture and place it in the refrigerator for at least 2 hours to chill.

Step Six

While the ice cream mixture is chilling, prepare the berries. Wash the mixed berries and pat dry. Toss them in a bowl with the confectioners’ sugar. Let this sit for about an hour, until the sugar has drawn out some of the juices from the berries.

Step Seven

Once the ice cream mixture has chilled, churn it in an ice cream maker according to the manufacturer’s instructions. In the last few minutes of churning, add in the berries and any juice they have released.

Step Eight

Transfer the churned ice cream to a lidded container and freeze for at least 4 hours, or until firm. Then, enjoy your homemade Passion Berry Ice Cream!
