What You’ll Need

  • 4 Fresh Passion Fruits
  • 4 cups of Apple Juice
  • 2 tablespoons of Gelatin Powder
  • 1/2 cup of Granulated Sugar
  • 1 teaspoon of Lemon Juice
  • Mint leaves for garnish (optional)
ALLERGENS:

Method

Step One

Start by cutting the passion fruits in half and scoop out the pulp into a saucepan. Add the apple juice, lemon juice and sugar into the saucepan along with the passion fruit pulp.

Step Two

Heat the mixture over medium-high heat until it just starts to boil. At this point, reduce the heat to low and allow the mixture to simmer for about 10 minutes. Stir occasionally to ensure the sugar is fully dissolved.

Step Three

In a separate bowl, sprinkle the gelatin powder over 1/4 cup of cold water, making sure it is evenly distributed. Let it sit for about 5 minutes, or until the gelatin has become completely soft and spongy.

Step Four

After the juice mixture has cooled a little, slowly add the softened gelatin into it. Whisk progressively to fully dissolve it into the warm juice. Make sure all the gelatin granules have completely dissolved.

Step Five

Pour the final mixture through a fine mesh strainer into a bowl or individual serving dishes to remove any leftover passion fruit seeds and fibrous parts. Make sure you squeeze out all the juice and goodness.

Step Six

Cover the bowls or dishes with plastic wrap and refrigerate them for about 4 hours, or until the jelly sets completely. Bear in mind that bigger containers will require a longer time to set.

Step Seven

Once the jelly is set, garnish with a few fresh mint leaves, if desired. Your refreshing and delicious Passionfruit Jelly is now ready to be served! Enjoy!
