  • 1/2 cup of roasted almonds
  • 1 clove garlic, peeled
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of extra virgin olive oil
  • 1 cup of mixed fresh fruit (to top pasta, suggest diced strawberries, peaches, or pineapple)
  • Salt and black pepper to taste
  • 1/2 cup of reserved pasta water (as needed)

Method

Step One

Start by cooking the pasta. Follow the instructions on the pasta’s package to cook until it’s al dente. Remember to save about 1/2 cup of the pasta water before you drain the pasta. Set the drained pasta and reserved water aside.
