What You’ll Need
- 6 ripe peaches
- 1/2 watermelon
- 2 cups of strawberries
- 1 cup of red raspberries
- 1/4 cup of honey
- 1/4 cup of apple cider vinegar
- 1/2 cup of extra virgin olive oil
- 2 tablespoons of fresh lemon juice
- 1 teaspoon of sea salt
- 1 teaspoon of ground black pepper
- 1/2 cup of fresh mint leaves
Method
Step One
Remove the pits from the peaches and chop them into small pieces. Do the same with the watermelon, ensuring the rind is removed.
Step Two
Take your chopped peaches and watermelon and place them in a large bowl. Then, add the strawberries and raspberries to the bowl as well.
Step Three
Drizzle the honey over the fruit mixture. Pour over the apple cider vinegar, the extra virgin olive oil, and the fresh lemon juice. Add in the sea salt and ground black pepper and mix until all the ingredients are well combined.
Step Four
Use a blender or food processor to puree the fruit and liquid mixture until smooth. Depending on the size of your blender, you may need to do this in batches. The goal here is to achieve a smooth, soup-like consistency.
Step Five
Once all of the fruit has been pureed, refrigerate the mixture for at least 2 hours. This will give the flavors a chance to blend together and will make the gazpacho refreshing to eat.
Step Six
While the gazpacho is chilling, take the time to finely chop the fresh mint leaves. Once the gazpacho is adequately chilled, stir in the chopped mint. This will add a fresh burst of flavor to the dish.
