What You’ll Need
- 1 cup Fresh Perilla Leaves
- 1/2 cup Walnuts
- 2 cloves Garlic
- 1/2 cup Extra Virgin Olive Oil
- Salt and Pepper to taste
- 1/2 cup Parmesan Cheese, finely grated
- 2 cups Cherry Tomatoes
- 3 cups Freshly cooked Pasta
- 2 cups Sliced Fresh Fruits (of your choice, like grapes, apples, berries etc.)
- 1 tablespoon Lemon Juice
- 1 tablespoon Honey
Method
Step One
Start by making the perilla pesto. Place the fresh perilla leaves, walnuts, and garlic cloves in a food processor. Blend until the mixture is finely chopped.
Step Two
While continuing to blend the mixture, gradually add in the extra virgin olive oil. Season with salt and pepper to taste. Once thoroughly blended, add in the finely grated Parmesan cheese and blend until everything is incorporated.
Step Three
In a large bowl, add freshly cooked pasta and cherry tomatoes. Pour over the perilla pesto and mix until the pasta is well coated. Set aside.
