But once your palate is introduced to the fresh, fruity zest of the Persian hogweed, coupled with the rich, hearty beef, there’s no turning back. Apart from its delightful taste, this recipe also packs a note-worthy wallop of health benefits. The hero ingredient, Persian hogweed (golpar), is highly nutritious. It’s rich in antioxidants, supports healthy digestion, and may even boost your immune system. Furthermore, the inclusion of lean beef provides high-quality protein and essential nutrients, while the spices (turmeric and fenugreek leaves) further enhance its nutritional profile – and let’s not forget about the heart-healthy fats from olive oil and the detoxifying properties of parsley! Beyond these fantastic health perks, it’s the rich, multicultural experience that this dish offers which truly explains why I love this recipe.

What You’ll Need

  • 1.5 lbs of beef stew meat
  • 2 bundles of Persian hogweed (golpar)
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon of turmeric
  • 1 tablespoon of dried fenugreek leaves
  • 2 tablespoons of vegetable oil
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper
  • 3 tablespoons of lemon juice
  • 2 cups of water
  • 6 cups of Persian hogweed broth
  • 2 tablespoons of olive oil
  • 1 cup of chopped fresh parsley
ALLERGENS: beef, garlic, fenugreek, vegetable oil, black pepper, olive oil

Method

Step One

Begin by heating the vegetable oil in a large pot over medium-high heat. Add the chopped onion, garlic, and turmeric, and sauté for about 5-7 minutes, or until the onion turns golden brown.

Step Two

Add the beef stew meat to the pot and season it with the salt and black pepper. Sauté the meat until it is browned on all sides. This should take about 10-15 minutes.

Step Three

Next, add the dried fenugreek leaves and the bundles of Persian hogweed to the pot. Mix well to ensure all ingredients are combined and cook for another 5 minutes.

Step Four

Then, add the 2 cups of water and the 6 cups of Persian hogweed broth. Lower the heat to a simmer and let the stew cook for about 1.5-2 hours. You’ll know it’s done when the meat is tender and easy to break apart.

Step Five

While the stew is simmering, heat the olive oil in a separate pan over medium heat. Add the chopped fresh parsley and cook until it is wilted. This should take about 2-3 minutes.

Step Six

Once the stew is ready, add the cooked parsley and the lemon juice, stirring well to combine. Let it simmer for an additional 5 minutes, so that all the flavors can meld together.

Step Seven

Finally, taste the stew and adjust the seasoning if necessary. Serve hot, and enjoy this flavorful Persian Hogweed Stew with Beef!
