What You’ll Need

  • 1 whole chicken, cut into 8 pieces
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 large white onion, chopped
  • 4 cloves of garlic, minced
  • 2 fresh Peruvian peppers (ají amarillo), seeded and chopped
  • 1 cup fresh cilantro leaves
  • 8 cups chicken stock
  • 1 cup long grain white rice
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 2 carrots, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 tablespoons lime juice
  • 6 lime wedges, for garnish
ALLERGENS: chicken, vegetable oil, garlic

Method

Step One

Season the chicken pieces with salt and pepper. Heat the vegetable oil in a large pot or dutch oven over medium-high heat. Add the chicken to the pot and cook until browned on all sides. Remove the chicken from the pot and set aside.

Step Two

In the same pot, add the chopped onion, minced garlic, and chopped Peruvian peppers. Cook until the onions are translucent, stirring frequently to prevent burning.

Step Three

In a blender, combine the cilantro leaves with a bit of the chicken stock and blend until smooth. Add this cilantro mixture to the pot with the onions and peppers.

Step Four
