What You’ll Need

  • 3 large red onions, sliced thinly
  • 4 medium tomatoes, diced
  • 1 cup apple cider vinegar
  • 1.5 cups granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 lemon, juiced
  • 1/2 cup raisins
ALLERGENS: None

Method

Step One

Start by prepping your ingredients. Slice the red onions thinly and dice the tomatoes. Set these aside for later use.

Step Two

Next, add the apple cider vinegar, granulated sugar, and salt to a large saucepan. Stir these ingredients together on medium heat until the sugar fully dissolves. This should create a thick syrup-like mixture.

Step Three

Add the ground mustard, turmeric, ground coriander, black pepper, and red pepper flakes to the saucepan. Stir well so all the spices blend into the mixture.

Step Four

Add the thinly sliced red onions and diced tomatoes into the mixture in the saucepan. Stir well so they’re coated in the spicy syrup concoction.

Step Five

Reduce the heat on the saucepan to low and let the mixture simmer. You’ll want to stir the mixture occasionally. Look for the onions and tomatoes to become tender, which should take about 45 minutes.

Step Six

Once the tomatoes and onions are tender, add the juice from half a lemon and the raisins. Stir well. Let the mixture simmer for another 15 minutes, or until it reaches your desired consistency.

Step Seven

Finally, remove the saucepan from the heat and allow the chutney to cool before transferring it into a clean jar. Then, store it in the refrigerator. This Pickled Onion and Tomato Chutney can be served chilled or at room temperature.
