I must confess, I’ve fostered an unwavering affection for this distinctly festive dessert since childhood, which brings me to share this hearty Pineapple Upside Down Cake recipe. This, my dear friends, is not merely a sweet indulgence but an embodiment of my culinary journey blending the richness of Southern and West African cuisines, a journey fueled by untold lavish flavors that reflect the harmonious melody of both cultures.
Gems of This Recipe
Pineapple Upside Down Cake indeed carries an exquisite blend of tropic sweetness infused with the caramelized succulence of brown sugar, the velvety seduction of butter, and the fruity delight of maraschino cherries. Yet, this cake recipe stands apart for its added appeal – the gleaming pineapple motifs, reminiscent of ornamental handiworks on Nigerian Ankara prints. It subtly echoes my heritage and provides the perfect end note for any gathering with its vibrant visuals and elegant appeal.
Perfect Combinations
This flamboyant gem sits closely beside other classics like New York Cheesecake and Eight-Layer Orange Chiffon Cake. Yet, the Pineapple Upside Down Cake holds a unique charm that fills the room with a fruity aroma and invariably kindle nostalgia of warm summer days. This cake is also an excellent accompaniment for your barbeque parties. Its sweet and tangy flavors pair excellently with various grilled dishes, particularly salmon and other seafood.
Nutritious Indulgence
Besides its tempting appeal, this Pineapple Upside Down Cake introduces a fantastic compromise between satisfying sweet cravings and incorporating some essential nutrients. Pineapples, for instance, are an excellent source of Vitamin C and manganese, providing a healthful edge to the dessert. Furthermore, pineapple aids digestion and has anti-inflammatory properties, making this cake not just another indulgence, but a dessert that caters to your health too.
Feel free to explore and experiment with this recipe. Perhaps you could even modify it using different fruits or additional spices. That’s the beauty of cooking; there are no rules, only tastes, and experiences. And for all you know, you might end up concocting a fruity delight that reflects who you are, just like my Pineapple Upside Down Cake recipe.
What You’ll Need
- 1/2 cup of unsalted butter
- 1 cup of packed light brown sugar
- 1 can (20 oz) of pineapple slices in 100% juice, juice reserved
- 12 maraschino cherries
- 1 1/2 cups of all-purpose flour
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 3/4 cup of granulated sugar
- 1/4 cup of vegetable oil
- 1 large egg
- 1 tsp of vanilla extract
- 3/4 cup of buttermilk
Method
Step One
Preheat the oven to 350 degrees Fahrenheit. Melt the butter and pour it into the bottom of a 9×13 inch baking dish. Sprinkle the brown sugar evenly over the melted butter.
Step Two
Drain the can of pineapple slices, reserving the juice. Arrange the slices on top of the brown sugar. Place a maraschino cherry inside each pineapple ring and scatter extras around as desired.
Step Three
In a medium bowl, combine the all-purpose flour, baking powder, baking soda and salt. In another larger bowl, whisk together the granulated sugar, vegetable oil and egg until mixed. Stir in the vanilla extract.
Step Four
Alternate adding the dry ingredients and the buttermilk into the sugar-oil mixture, beginning and ending with the dry ingredients. Stir just until combined after each addition.
Step Five
Spread the batter evenly over the pineapple slices in the baking dish. Bake for 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step Six
Allow the cake to cool for about 10 minutes, then carefully flip it over onto a serving platter. Top any pineapple slices or cherries that stick to the pan back onto the cake. Serve warm or at room temperature.
