What You’ll Need

  • 2 whole ripe but firm Plantains
  • 1 cup Vegetable oil
  • 1 teaspoon Sea salt
  • 1/2 teaspoon Cayenne pepper (optional)

Method

Step One

First, begin by peeling the plantains. Then, cut them into thin, even slices. This is crucial to ensure even cooking.

Step Two

Next, pour the vegetable oil into a large frying pan. Place the pan over medium-high heat. Allow the oil to heat up until it reaches about 350 degrees F, or until small bubbles start to form around the handle of a wooden spoon dipped in the oil.

Step Three

Once the oil has reached the correct temperature, carefully add the slices of plantain into the pan. Be sure to not overcrowd the pan, frying them in batches if necessary. Fry the plantains until they are crispy and golden brown on each side, this should take about 2-3 minutes on each side.

Step Four

After the plantain chips are fried to the desired crispness, use a slotted spoon to remove them from the oil. Transfer the chips onto a paper towel-lined plate to drain and cool.

Step Five

While the chips are still warm, season them with the sea salt and optional cayenne pepper. Toss the chips gently to ensure they are evenly seasoned.

Step Six
