There’s something absolutely wonderful about Plantain Pancakes. That’s why I can’t resist sharing this delectable recipe with all of you. These fluffy morsels of flavor capture the perfect balance of naturally sweet plantains with a hint of spicy ground cinnamon, and are a fantastic way to kick-start your day or enjoy a leisurely brunch with loved ones.
A True Blend of Heritages
As someone who hails from Seattle and spends a significant amount of time in Japan, my culinary inspirations are as diverse as they come. This recipe for Plantain Pancakes, although not explicitly Japanese, encapsulates the spirit of my cross-cultural palate. It brings to mind the classic Okonomiyaki, a savory pancake that is a much-loved Japanese street food staple. Just as Okonomiyaki blends diverse ingredients into a flavorful whole, so too does this recipe harmonize the sweet and savory overtones of the plantains with the gentle kiss of cinnamon and vanilla.
Not Just Delicious, But Nutritious
But Plantain Pancakes don’t just deliver on the taste front. They hold their own in terms of health benefits too. Plantains, much like bananas, are an excellent source of Potassium and Vitamin C, while also providing dietary fiber to aid in digestion. Furthermore, the inclusion of eggs enriches these pancakes with a good dose of protein.
The inherent versatility of this dish is another plus. These pancakes can work as an accompaniment to a main dish, much like cornbread does in Southern cuisine. However, they shine just as brightly served solo, with a hearty drizzle of maple syrup. They’re also superb when served alongside a refreshing fruit salad or a protein-rich omelette for a complete breakfast.
In the spirit of a truly international breakfast, why not pair these pancakes with a smooth, Japanese Matcha Latte? Or for those of you wanting a bit more excitement, toss in some homemade bacon on the side. Whichever way you serve them, Plantain Pancakes are sure to bring a unique, flavorful flair to your meals.
What You’ll Need
- 2 ripe plantains, peeled and chopped
- 1 cup of all-purpose flour
- 1/2 cup of milk
- 2 large eggs
- 2 tablespoons of granulated sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 teaspoon of ground cinnamon
- Butter or oil for cooking
- Maple syrup for serving
Method
Step One
Begin by peeling and chopping the ripe plantains. Once chopped, transfer them into a blender.
Step Two
Into the blender, add the rest of the ingredients – the all-purpose flour, milk, large eggs, granulated sugar, vanilla extract, baking powder, baking soda, salt and ground cinnamon. Blend the mixture until it has a smooth consistency.
Step Three
Preheat a griddle or non-stick pan over medium heat. Grease it lightly with some butter or oil.
Step Four
Using a ladle or a 1/4 cup measure, pour the pancake batter onto the griddle. Cook each pancake until it starts to bubble on top and is lightly browned on the bottom, which should take about 2-3 minutes. Flip the pancake and cook the other side until it is also lightly browned, about 1-2 minutes more.
Step Five
Once both sides of the pancake are lightly browned, remove it from the griddle and place it on a serving tray. Repeat this process until all the batter has been used up.
Step Six
Finally, serve your delicious plantain pancakes warm, drizzled with some maple syrup. Enjoy this tasty and unique spin on a breakfast classic.
