What You’ll Need

  • 6 large ripe plantains
  • 1/2 pound cooked and shredded chicken breast
  • 1/2 cup finely chopped onions

  • 1 medium size tomato, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 6 slices of cheese
  • Butter (for frying the plantains)
  • Green lettuce leaves (optional)

Method

Step One

Start by peeling the ripe plantains. Once peeled, cut each plantain into three sections. Then, flatten each section using a flat surface such as a plate or a cutting board. These will be used as the “bread” in your sandwich.

Step Two

In a frying pan, melt some butter over medium heat. Add the flattened plantains to the hot butter and fry until golden brown on each side. Once cooked, remove them from the pan and place them on a paper towel to absorb excess oil.

Step Three

In a separate pan, add the olive oil and heat over medium heat. Add the onions, garlic, bell pepper, and tomato to the pan and stir until the vegetables become soft.

Step Four

Next, add the shredded chicken, tomato paste, salt, and black pepper to the pan. Stir to combine all the ingredients. Allow this mixture to cook for a few minutes until all the flavors are well incorporated.
