The Craft of Pogača

Pogača creates an inviting spectacle in your kitchen with a simple series of steps transforming everyday pantry staples into a warm, golden loaf. Appreciating the magical abilities of yeast is a key aspect of this process. The dough is carefully kneaded and given time to rest, allowing the yeast to work its magic, resulting in a fluffy, rise-laden dough.

What Dishes Work Well With Pogača?

Delectable and versatile, Pogača is the perfect accompaniment to soups, stews, and casseroles. Serving it alongside dishes like Serbian cabbage soup or Bulgarian Moussaka, Pogača absorbs the rich gravies and contrasts beautifully with robust flavors. Inspired by focaccia and scone-like in texture, this bread can also be a delightful addition to your breakfast table, serving as an excellent base for spreads and jams.

A Bread Stitched With Tradition

Baking Pogača is not only about creating a scrumptious loaf of bread, but it’s also about preserving a long-cherished tradition. It’s a culinary ritual passed down through generations, making it more than just an act of preparing food, but a living embodiment of shared stories, histories, and hearty meals.

So, next time you feel the need to fill your house with the alluring smell of fresh-baked bread, why not give Pogača a try? You’ll be carrying on age-old traditions, anchored in a loaf made with nothing but love.

What You’ll Need

  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1/2 cup lukewarm water
  • 1/2 cup lukewarm milk
  • 1/2 cup vegetable oil
  • 1 large egg, beaten
  • 1 large egg (for egg wash)
  • 2 tablespoons sesame seeds
ALLERGENS: wheat, milk, egg, sesame

Method

Step One

Combine the dry yeast and sugar in the lukewarm water and set aside for 5-10 minutes until it becomes frothy.

Step Two

In a large mixing bowl, mix together the flour and salt. Afterwards, make a well in the center.

Step Three

Pour the yeast mixture, beaten egg, lukewarm milk, and vegetable oil into the well in the flour. Gradually mix together until a dough begins to form.

Step Four

Transfer the dough onto a clean and lightly floured surface. Knead for about 5-10 minutes until the dough becomes smooth and elastic.

Step Five

Place the dough inside a greased bowl, cover with a clean towel and set aside for about 1-1.5 hours or until the dough doubles in size.

Step Six

Once the dough has risen, punch it down to release the gas bubbles formed by the yeast. Then, shape the dough into a round loaf. Step Seven Place the loaf onto a greased baking tray. Let it rest for another 15-20 minutes.

Step Seven

Preheat your oven to 375°F (190°C). While waiting for the oven to heat up, whisk the remaining egg and brush it over the top of the loaf, then sprinkle the sesame seeds over the top.

Step Eight

Place the loaf in the oven and bake for about 30-35 minutes or until the top becomes golden brown and the loaf sounds hollow when tapped at the bottom.

Step Nine

When the bread is done baking, remove it from the oven and let it cool before cutting into it to serve.
