- 2 pounds of pointed gourd (also known as parwal), peeled and chopped
- 1 cup chopped onion
- 2 tablespoons vegetable oil
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- 1 large apple, peeled and diced
- 1 carrot, peeled and chopped
- 1 rib celery, chopped
- 6 cups vegetable stock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon turmeric powder
- 1/2 teaspoon cayenne pepper
- 1 cup coconut milk
- Freshly chopped cilantro for garnish
Method
Step One
Begin by preparing all your ingredients. Peel and chop up your pointed gourd, onion, apple, carrot, and celery. Mince the garlic and ginger.
Step Two
In a large pot, heat up your vegetable oil over medium heat. Once hot, add in the chopped onion and sauté until it becomes soft and translucent.
