What You’ll Need
- 2 large oranges
- 2 large pomegranates
- 1 tablespoon of freshly squeezed lemon juice
- 1 tablespoon of honey
- 1/4 cup of chopped fresh mint leaves
- 1/2 cup of crumbled feta cheese (optional)
Method
Step One
First, peel the two large oranges. After peeling, slice them into thin rounds and set aside.
Step Two
Now, cut the pomegranates in half. Hold each half over a bowl, cut side down, and tap the back with a wooden spoon, squeezing slightly to release the seeds (also known as arils). Do this for all 4 halves and set the seeds aside.
Step Three
In a small bowl, whisk together the freshly squeezed lemon juice and honey until well combined. This will form your salad dressing.
Step Four
Arrange the orange slices on a platter or in a salad bowl. Sprinkle the pomegranate seeds over the oranges, ensuring an even distribution.
