What You’ll Need
- 2 large pomelos
- 1 cup of fresh lemon juice
- 2 cups of granulated sugar
- 1/2 cup of unsalted butter, softened
- 1/4 cup of confectioners’ sugar
- 2 cups of all-purpose flour
- 4 large eggs
- 1/4 teaspoon of salt
- 1/2 teaspoon of baking powder
Method
Step One
Preheat your oven to 350 degrees Fahrenheit. Line a square 9×9-inch baking pan with parchment paper, ensuring a couple of inches overhang on all sides. This will make it easier to lift the bars out of the pan once they’re done.
Step Two
In a large mixing bowl, cream together the softened butter and 1/2 cup of the granulated sugar. Then, gradually add in the all-purpose flour and salt, mixing well until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of your prepared baking pan.
Step Three
Bake the crust in the preheated oven for about 20 minutes or until the edges of the crust start to turn golden brown. While the crust is baking, you can start preparing the filling.
Step Four
To prepare the filling, zest the two large pomelos and squeeze to extract the juice. You should aim for 1 cup of pomelo juice. If you don’t have enough, you can top it off with the lemon juice.

In a mixing bowl, whisk together the remaining granulated sugar, pomelo zest, pomelo juice, the rest of the lemon juice, eggs, and baking powder. Ensure the mixture is well combined.
Step Six
Once the crust is done, pour the filling over the hot crust and return the pan to the oven. Bake for about 25 minutes or until the filling is set and doesn’t jiggle when you shake the pan.
