What You’ll Need

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 cans (10.5 ounces each) cream of chicken soup
  • 16 oz sour cream
  • 2 cups crushed Ritz crackers
  • 1 cup melted unsalted butter
  • 1 tablespoon poppy seeds

Method

Step One

Preheat your oven to 350°F (175°C). While the oven is heating, season the chicken breasts with salt and pepper to taste.

Step Two

Place the seasoned chicken breasts in a saucepan and fill it with enough water to cover the chicken. Bring the water to a boil, then reduce the heat to low and let the chicken simmer until it’s cooked through, about 20 minutes. Once cooked, remove the chicken from the saucepan, let it cool, and shred it into bite-sized pieces.

Step Three

In a large bowl, combine the cream of chicken soup and sour cream. Stir until the two ingredients are well mixed. Add the shredded chicken to this mixture and stir until the chicken is well coated with the soup and sour cream mixture.

Step Four

Transfer the chicken mixture to a casserole dish, spreading it out in an even layer.

Step Five

In a separate bowl, combine the crushed Ritz crackers, melted butter, and poppy seeds. Stir until the crackers are well coated with the butter and the poppy seeds are evenly distributed.

Step Six

Spoon the cracker mixture over the chicken mixture in the casserole dish, spreading it out in an even layer.

Step Seven

Place the casserole dish in the preheated oven and bake until the top is golden brown and the casserole is bubbling, about 30 minutes. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
