However, the heart of this dish is more in tune with the flavors and techniques I have learned from Italian cuisine. Renowned Italian celebrity chef, Gino D’Acampo, and his creative use of herbs and spices to enhance the natural flavors of meat, have been an inspiration for this recipe.

Even though my specialty dishes revolve around bison burgers, venison steaks, and huckleberry pies, I relish the opportunity to experiment with different culinary styles. What You’ll Need

  • 6 pork steaks
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 cloves of garlic, minced
  • 1 large onion, chopped
  • 1 pound of fresh mushrooms, sliced
  • 1/2 cup white wine
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 cup chicken broth
  • 1 tablespoon all-purpose flour
  • 2 tablespoons unsalted butter
ALLERGENS: Pork, Garlic, Onion, Wheat, Chicken

Method

Step One

Season the 6 pork steaks with salt and black pepper to taste.

Step Two

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the seasoned pork steaks to the skillet. Sear each side of the pork steaks until they are nicely browned. Once browned, remove the steaks from the skillet and set them aside.

Step Three

In the same skillet, add 2 minced cloves of garlic and 1 large chopped onion. Sauté over medium heat until they become fragrant and the onions are translucent.

Step Four

Add in 1 pound of fresh, sliced mushrooms. Continue to sauté until the mushrooms have turned golden brown.

Step Five

Pour 1/2 cup of white wine into the skillet, and stir the ingredients to deglaze the skillet. Allow the wine to simmer and reduce by half.

Step Six

Stir in 1 tablespoon of fresh chopped parsley, 1/2 teaspoon of dried oregano, and 1/2 teaspoon of dried basil. Mix until the ingredients are well combined.

Step Seven

In a small bowl, whisk 1 tablespoon of all-purpose flour into 1 cup of chicken broth until no lumps remain. Pour this mixture into the skillet and stir well.

Step Eight

Return the pork steaks to the skillet, nestling them into the mushroom and onion mixture. Let everything simmer for about 20 minutes, or until the pork is cooked through and the sauce has thickened.

Step Nine

Just before serving, stir in 2 tablespoons of unsalted butter to add a touch of richness to the sauce. Serve hot, garnished with additional fresh parsley if desired.
