What You’ll Need

  • 8 medium potatoes
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped celery
  • 2 teaspoons of lovage seeds
  • 1/2 cup of mayonnaise
  • 1/4 cup of apple cider vinegar
  • 2 teaspoons of sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 3 hard-boiled eggs, chopped
  • Paprika for garnish
  • Chopped fresh parsley for garnish

Method

Step One

First, wash the potatoes and put them in a large pot, covering them with water and bringing to a boil. Boil the potatoes until they are tender when poked with a fork. Once tender, drain the potatoes and let them cool. Peel the potatoes and cut them into bite-sized pieces.

Step Two

In the meantime, chop the onion, celery and hard-boiled eggs.

Step Three

In a large mixing bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, black pepper, and lovage seeds to make the dressing.
