What You’ll Need

  • 1 medium pumpkin
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 2 pizza dough (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled blue cheese
  • 2 cups fresh arugula
  • 1/2 cup caramelised onions
  • 2 garlic cloves, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1/4 cup pine nuts (optional)
  • 1/4 cup balsamic reduction (optional)

Method

Step One

Preheat your oven to 400°F (200°C). Split the pumpkin in half, remove the seeds, and slice into wedges. Arrange the wedges on a baking sheet, drizzle with olive oil, and season with salt and pepper.

Step Two

Roast the pumpkin in the oven for about 30-40 minutes, or until it’s fork-tender. Once done, let it cool, then peel off the skin and cut the flesh into bite-size pieces.
