I appreciate its ability to take staple ingredients and turn them into the sublime. Buying into this, I brought Thai cuisine into my kitchen, and the Thai Pumpkin Fried Rice was born.

I remember, few years back, I came across a Chef NumP, who generously shared a wealth of Thai food recipes online. His charming nature and passion for Thai food cuisine really inspired me to experiment with Thai flavors.

What You’ll Need

  • 3 cups of cooked jasmine rice
  • 2 cups of cubed pumpkin
  • 2 tablespoons vegetable oil
  • 2 cloves of garlic, minced
  • 1 medium-sized onion, chopped
  • 1 red bell pepper, diced
  • 1 cup sweet corn
  • 2 large eggs, beaten
  • 2 green onions, sliced
  • 1/3 cup of low-sodium soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons sugar
  • 1 teaspoon ground black pepper
  • Handful of fresh basil leaves
  • 1/2 cup of chopped roasted peanuts

Method

Step One

Prepare your ingredients. Cook the jasmine rice according to the package instructions and set aside. Cube the pumpkin, mince the garlic, chop the onion, dice the bell pepper, slice the green onions and chop the roasted peanuts. Keep all the ingredients within easy reach as you’ll need them quickly during cooking.

Step Two

Heat the vegetable oil in a large wok or skillet over medium-high heat. Once the oil is shimmering, add the garlic and onion. Fry until the onion becomes translucent and the garlic is golden and fragrant, stirring frequently.

Step Three

Add the cubed pumpkin and bell pepper to the wok or skillet. Cook until the pumpkin begins to soften and the bell pepper is crisp-tender, being sure to stir often to prevent burning.

Step Four

Add the sweet corn to the skillet, and continue to cook until it is heated through. Keep stirring to ensure even cooking. Make a well in the center of the vegetable mixture and pour in the beaten eggs. Let the eggs cook until set, and then stir them into the vegetables.

Step Five

Once the eggs are thoroughly cooked, add in the cooked jasmine rice, green onions, soy sauce, fish sauce, sugar, and ground black pepper. Mix everything together until all the ingredients are well combined and heated through.

Step Six

Turn off the heat, then stir in the fresh basil leaves. Sprinkle the top of the fried rice with the chopped roasted peanuts just before serving.
